Method :

Heat oil in a medium saucepan and
gently stir fry garlic and shallots or onion until golden but not
brown.

Add chili sauce, tomato ketchup,
soy and fish sauce, sugar and vinegar.

Stir to blend well, then add stock
and bring to the boil, stirring continuously.

Taste sauce to check sweet and sour
balance and adjust seasoning if necessary.

Mix corn flour with 2-3 tablespoons
water and add to sauce, stirring until smooth, then remove from heat
and serve.
Make about 450 ml
This sauce is traditionally used for
fried or grilled dishes, or it can be used as a dip at table.
