Method :

In a bowl, mix garlic, shallots,
ginger, sugar, fish sauce and salt and pepper.

Add pork and leave to marinate for
25-30 minutes.

Heat oil in a wok or frying pan and
stir fry pork pieces for 2 minutes, then add bamboo shoots, chilies,
spring onions and oyster sauce and stir fry for 4-5 minutes.

Rinse out marinade bowl with stock
or water and add to pork mixture.

Bring to the boil.

Mix corn flour with 1 tablespoon
water and stir into sauce.

Cook, stirring, until thickened.

Add sesame oil, garnish with
coriander sprigs and serve with halved cucumber slices.
