Method :
- Using a pestle and mortar, pound garlic, coriander, lemon grass
and peppercorns to a paste.
- Heat oil in a wok, or frying pan and stir fry spicy paste for
15-20 seconds until fragrant.
- Add prawns, shallots or onion, chilies and tomatoes and stir fry
for 2-3 minutes.
- Add fish sauce, oyster sauce and stock or water, bring to the
boil and simmer for 2-3 minutes.
- Serve garnished with coriander sprigs.
