Method :
- Heat oil in a wok or frying pan
and stir fry garlic and onion for about 1 minute.
- Add French beans and stir fry for
2-3 minutes, adding a little stock or water if beans seem to be too
dry.
- Add chilies and tomatoes, and stir
fry for a further 1 minute, then add salt, pepper and sugar and
blend well.
- Serve beans hot or cold, garnished
with chopped coriander, if wished.
