Method :
- Heat oil in wok or frying pan and
stir fry ginger and garlic for about 30 seconds until fragrant.
- Add courgettes and carrot and stir
fry for about 2 minutes, then add stock or water to create steam,
and continue stirring for another 1-2 minutes.
- Add straw mushrooms, tomato and
spring onions with salt, pepper and sugar.
- Blend well and cook for a further
1-2 minutes.
- Sprinkle with fish sauce and serve
at once.

Variation :
Other fresh delicate vegetables, such as
asparagus, mange tout, green peppers or cucumber, can also be cooked in
this way.
