Scrape off the skin of the marrow,
clean it and scoop out the central pith with a teaspoon.

Shell, clean and chop the shrimps.

Dice the onion to get 1 tablespoon
diced onion.

Mix the chopped shrimps, minced
pork, yam bean, onion, 1 teaspoon tapioca flour, 1/2 teaspoon salt,
1 teaspoon sesame oil and pepper.

Knead the ingredients well.

Stuff the marrow with this mixture.

Heat oil in a saucepan and fry the
marrow, turning it frequently until evenly browed.

Add 1 cup water with 1/4 teaspoon
salt to the pan.

Cover the pan and allow the marrow
to simmer for 30 minutes until tender.

Blend 1/2 teaspoon tapioca flour
with 1 tablespoon water and thicken the gravy with it.

Add in the spring onions, season to
taste and serve whole or sliced.
