Method :

Rinse the peas in a colander under
cold water.

Sauté the onion or shallot, garlic,
parsley, and pancetta together in the oil over a moderate heat for 2
minutes.

Add the peas, season with salt and
pepper, and stir well.

Pour in the wine, cover and simmer
gently for 15-20 minutes, stirring occasionally.

Moisten with a little stock as
necessary.

Serve hot.
