Method :
Cut the
broccoli and cauliflower into small florets. Trim the asparagus of
any woody ends and cut in half. Plunge the vegetables into boiling
water for 3 minutes so that they retain their crispness. Drain the
vegetables and immerse in very cold water; this will help them
retain their color. Drain the vegetables well, place in a serving
bowl and serve with Eastern Dressing.
To make Eastern
Dressing: Put the oil, sesame oil, soy sauce, lime juice, garlic, sugar,
ginger and fresh coriander in a bowl and whisk until combined.
