Method :
Melt butter
in a small saucepan. Add onion and cook gently 5 minutes, stirring.
Sprinkle in flour, sugar, thyme, nutmeg, salt and pepper. Stir to blend
and remove from heat. Add milk all at once. Stir to blend and return to
moderate heat. Cook until boiling, thickened and smooth, stirring
constantly. Turn heat to low and continue cooking 10 minutes, stirring
occasionally. Cook peas in a little boiling salted water just until
tender-crisp. Drain. Stir in hot sauce. Serve immediately. If you must
hold the peas for a little while, keep them hot by putting them over hot
water in a double boiler.
