Beans Provencale Recipes

dried haricot beans, soaked and drained
canned tomatoes
large onion, chopped
clove garlic, crushed
dried oregano
salt and ground black pepper
small onion, sliced into rings |
Method :
-
Cook the beans in boiling, unsalted
water for about 1 hour, or until tender, then drain.
- Meanwhile, boil the tomatoes,
onion, garlic and oregano, seasoned with salt and pepper for 5
minutes to reduce the liquid slightly.
- Add the cooked, drained beans and
simmer for 20 minutes.
- Turn into a heated serving dish
and garnish with the onion rings.
Serving Suggestion :
A good accompaniment to a savory flan
- either as an extra vegetable or a sauce.
