Method :

Chop the onions, pepper, and celery,
using the food processor if you like.

In large saucepan, heat the oil over
medium heat and add the chopped vegetables, then pass the garlic
through a garlic press directly into the pan.

Cook the vegetables for about 5
minutes, then add all the remaining ingredients.

Stir well and bring to a boil.

Lower the heat, cover and simmer for
about 25 minutes, until the rice is cooked through and most of the
liquid has been absorbed.

Taste and adjust seasonings.
Serves 4
Vary the Jambalaya - or enrich the shrimp
one - by adding other meats, such as ham cut into large cubes, diced
cooked chicken, or any type of sausage. The authentic Louisiana recipe
would include andouille sausage, but you could also add slices of
kielbasa, or even spicy Italian sausage. If you want to use any raw
meats instead of cooked ones, brown the meat with the vegetables before
adding the other ingredients.
