Scallop and Spinach Quiche Recipes

small onion, finely chopped

shredded spinach

cream

scallops, cleaned
gruyere cheese, sliced
freshly ground black pepper
pinch grated nutmeg |
Method :
- To prepare pastry: Sift flour into
a bowl.
- Add butter, run info flour, using
fingertips, until mixture resembles breadcrumbs.
- Combine egg yolk, lemon juice and
half the water.
- Sprinkle over flour, stir to form
a soft, pliable dough.
- Add extra water if necessary.
- Knead lightly.
- Wrap in plastic wrap, rest in the
refrigerator for 30 minutes.
- Roll out pastry to line a 28cm
flan tin.
- To prepare filling: Cook onion in
butter until transparent.
- Add spinach, cook for 3 minutes,
cool slightly.
- Place spinach mixture in a bowl
with eggs, cream, milk and seasoning.
- Beat well until combined.
- Pour spinach mixture into pastry
shell.
- Place scallops and cheese on top.
- Bake in a moderately hot oven 190C
(375F) for 35-40 minutes or until set.
- Serve with a tossed salad.
