Method :
Preheat the
oven to 350 degrees. Rinse and thoroughly dry the shrimp. Place the
shrimp in a medium-size roasting pan or shallow casserole and pour the
salt on top. (The salt should totally cover the shrimp). Roast the
shrimp for 15 minutes. Remove the pan from the oven and dig the shrimp
out from under the salt. Using salt clinging to the shells. Serve the
shrimp in their shells and let everyone peel their own. Pass the lemon
and lime wedges separately. Serve with
Green Sauce or
Aioli Sauce, if
desired.

In this
recipe whole shrimp in their shells are literally smothered in coarse
kosher salt and then roasted. The salt forms a kind of crust that seals
in the shrimp's juices, resulting in unbelievably moist shrimp without a
trace of saltiness. (The salt is simply brushed off before serving). The
shrimp can be served hot, warm, or even cold with a variety of dipping
sauces. We particularly recommend
Green Sauce or
Aioli Sauce. Serve this
dish as an appetizer or as an entree with a rice dish, roasted red
peppers, and a green vegetables.
