500g raw prawns, shelled and deveined
8 spring onions, chopped
1 stalk lemon grass, chopped
1 clove garlic, crushed
1 egg white
1 tbsp oil
1 tbsp chopped fresh coriander leaves
1 tbsp fish sauce
2 tsp chili sauce
1 tsp lemon juice
8 slices stale bread, crusts removed
oil, for shallow frying |
Method :
Combine the
prawns, spring onions, lemon grass, garlic, egg white, oil, coriander,
sauces and lemon juice in a food processor. Process until finely chopped.
Spread the prawn mixture generously over the bread. Cut each slice into 4
triangles. Heat 1-2cm oil in a pan; add the bread and cook, prawn side
down, for 2-3 minutes. Turn over and cook the other side for 1 minute or
until golden and crisp. Drain well on paper towels.
