Mussels and Snow Peas Cooking Recipes

mussels
water
snow peas (mange tout), trimmed
fresh lychees, peeled
ginger root, finely sliced
Tomato dressing |
Method :
- Scrub mussels and remove beard.
- Discard any mussels with broken or
open shells.
- Bring water to the boil, add
mussels.
- Cover and steam for 3-5 minutes or
until they open.
- Remove mussels from shells, place
in a bowl, cover and set aside.
- Cover snow peas with boiling
water.
- Leave for 1 minute, drain and cool
under cold running water.
- Add snow peas to mussels.
- Halve lychees, removing stones.
- Mix with mussels, sprinkle over
ginger.
- Pour dressing over mussel mixture.
- Toss to coat all ingredients.
- Chill, covered, for 30 minutes.
- Drain off any excess dressing.
- Serve on individual plates.
