The largest
of the shrimps (prawns) family, measuring up to 15cm / 6 inches
long. The shell is pinkish orange, enclosing fine pink flesh. They
are imported frozen, both cooked and uncooked.
- Prepare
in the same way as small shrimps.
- If
uncooked, simmer the prawns in lightly salted water for about 15
minutes until bright pink, then serve in a salad with Hollandaise
Sauce. Vegetables such as carrots, celery and fennel can be added to
the cooking water to flavor the shrimps, if liked.

Alternatively, fry the shrimps (prawns) gently in garlic butter for
about 10 minutes until cooked through. When cooked, the flesh will
be opaque right through. Season with salt and pepper and add a dash
of sherry, then serve with crusty bread.
