Method :

Peel shells from shrimp, leaving
tails.

Slit along back; remove veins.

Flatten shrimp; pat dry.

Combine dry ingredients; add egg
white, water, and salad oil; beat well.

Dip shrimp in batter; fry in deep hot
fat (375°) till golden brown, about 5 minutes.

Remove and drain on paper towels.

Serve immediately with cocktail or
tartar sauce.
