Method :
Put washed
shrimp in small saucepan. Add boiling water, celery leaves, parsley
sprigs and peppercorns. Bring to a boil, turn down heat, cover and
simmer 5 minutes. Remove from heat and cool shrimp in liquid. Drain,
saving liquid. Shell, clean and chop shrimp finely. Strain shrimp liquid
and measure out the 3/4 cup (180ml) needed for next step.
Melt 2 tbsp
butter in saucepan. Add onion and cook gently 3 minutes, stirring.
Sprinkle in flour and blend well. Remove from heat and add cream and
shrimp cooking liquid all at once. Return to moderate heat and cook
until boiling, thickened and smooth, stirring constantly. Turn heat to
low and stir in salt, pepper, tarragon and lemon juice. Simmer 5
minutes, stirring often. Stir in chopped shrimp, crab, 1 tbsp parsley
and 1 tbsp butter. Heat well. Serve over hot rice, sprinkled with more
chopped parsley.
