1 1/2 lb fresh or thawed frozen scampi
2 cloves garlic, crushed
2 tsp salt
3/4 cup olive oil
1/4 cup finely chopped parsley
1/8 tsp dried leaf tarragon
2 tbsp lemon juice
freshly ground black pepper
3/4 cup butter, melted
1/2 cup fine dry bread crumbs |
Method :
Wash scampi
and cut away undershells with kitchen shears. Heat broiler. Add garlic,
salt, oil, parsley, tarragon, lemon juice and a grating of pepper to
melted butter. Dip each scampi into this mixture and then into bread
crumbs. Put in a single layer on shallow baking pan, shell side down.
Broil low under the broiler 5 minutes, spooning a little of the
remaining sauce over during broiling. Pour remaining sauce mixture into
small individual dishes for dipping scampi meat. Serve immediately.
