Pesto Recipes

Ingredients : |
2 oz pine nuts
2 garlic cloves, crushed
2 oz basil leaves
5 oz Parmesan cheese, freshly grated
2 tbsp lemon juice
1/4 pint olive oil
salt and pepper |
Method :

Put the pine nuts and the garlic into
a mortar and pound the mixture to a thick paste.

Alternatively, use a food processor or
blender.

Teat the basil leaves into shreds and
add to the pine nut mixture.

Continue pounding or processing until
you have a thick green paste.

Transfer to a bowl.

Stir in the Parmesan and the lemon
juice.

Add the olive oil, a little at a time,
beating well.

Season to taste.
