1/2 cup mayonnaise, homemade or bottled
1/2 cup plain low-fat yogurt
juice of 1 large lemon
1 tsp Dijon mustard
1/2 - 1 tsp Chinese chile paste
1 tsp toasted sesame oil
1 scallion, trimmed and very thinly sliced
1/4 cup chopped fresh parsley |
Method :
Mix all the ingredients in a small bowl
and taste for seasoning, adding more chile paste if desired. The sauce
can be made ahead of time and refrigerated, covered, for several hours
before serving.
Makes 1 cup
This simple dipping sauce, is made with a
little bit of Chinese chile paste (which gives it a rosy color and
wide-awake taste), but if you prefer a spicier sauce, you can easily add
more. This sauce also works well with steamed artichokes, roasted fish
or potatoes, or roasted or steamed vegetables.
