Potato and Mussel Salad with Red Wine Vinegar Recipes

Ingredients :

olive oil

onion, finely chopped

clove garlic, crushed

dry white wine

freshly squeezed lemon juice

sugar

oyster sauce

red wine vinegar

baby new potatoes, cooked, halved

mussels, cooked, shells removed

chopped parsley

drained and julienned pimentos

Method :
  1. Heat the oil in large frying pan over moderate heat.

  2. Add the onion and garlic, cook for 2 minutes.

  3. Add the wine, lemon juice, sugar, oyster sauce and vinegar and simmer mixture until reduced by half.

  4. Add the cooked potatoes and mussels to the pan and warm through.

  5. Stir in the parsley and pimentos and serve warm or at room temperature.

Serves 4
