Pepperoni Salad Recipe

Ingredients :

6 cups torn-up salad greens (use a mixture such as iceberg lettuce, leaf lettuce, Bibb or Boston lettuce and spinach)

1 cucumber (unpeeled if possible), cut in 2-inch (5-cm) strips

1/4 lb Mozzarella cheese, cut in 1/4 inch (0.5-cm) strips

1 small zucchini, sliced paper thin

1 cup cooked frozen baby lima beans

1 cup paper thin sliced pepperoni

1/4 cup thinly sliced green onions

salt

fresh ground pepper

1/4 cup olive oil

3 tbsp tarragon wine vinegar

2 tbsp chopped parsley

1 small clove garlic, crushed

1/8 tsp dry mustard

1/8 tsp dried leaf basil

pinch tarragon

1/2 tsp salt

1/8 tsp pepper

1/4 paprika

12 cherry tomatoes, cut in half

Method :

Combine salad greens, cucumber strips, cheese, zucchini, lima beans, pepperoni and onions in large salad bowl. Sprinkle lightly with salt and pepper and toss together gently. Combine all remaining ingredients except cherry tomatoes in a small jar with a tight lid. Shake to blend well. Pour just enough of this mixture over the salad to lightly coat all ingredients. Toss lightly. Add cherry tomatoes and toss again lightly. Serve immediately.
