Pasta Salad Recipes

Ingredients :

whole wheat pasta shells

dessert apples, cored and thinly sliced

lemon juice

grapefruit, segmented

seedless raisins

vegetable oil

red wine vinegar

plain low fat yoghurt

walnut halves

pepper

spinach or other salad leaves, to serve

salt

Method :
  1. Cook the pasta shells in boiling, salted water for 10-12 minutes, until they are just tender.

  2. Drain, plunge into cold water, drain and cool.

  3. Toss on crumpled kitchen paper to dry thoroughly.

  4. Toss the apple slices in the lemon juice, then toss with the pasta, grapefruit and raisins.

  5. Mix together the oil, vinegar and yoghurt and season with salt and pepper.

  6. Toss the salad in the dressing.

  7. Serve on the salad leaves and garnish with the walnuts.
