Method :

Cut daikon and carrots into three 5
cm (2 in) pieces and slice each piece very thinly lengthways and
then shred into thin matchsticks.

Place daikon and carrot matchsticks
in a mixing bowl and sprinkle with salt.

Using your hand, gently squash
them, then leave for 15-20 minutes.

Lightly squeeze out water between
your hands (do not press too hard) and put in another mixing bowl.

Mix rice vinegar and sugar and stir
well until sugar has dissolved.

Pour mixture into daikon and carrot
shreds and gently fold in to mix 2 colors evenly.

Heap it on a serving dish and
garnish with finely shredded lime zest.
Serves 4
The Japanese regard the combination of red
and white as celebration colors, so this dish is considered essential
for a New Year's Day brunch table.
