Put sugar, lime zest and juice and 150
ml water in a saucepan. Heat gently, stirring with a wooden
spoon, until sugar has dissolved. Heat syrup to boiling point then
simmer for 1 minutes. Remove form heat and leave to cool. Put pineapple, lychees, mangoes and
papaya in a serving dish. Pour over cool syrup. Cover dish with cling film and put in
the refrigerator to chill.
