Method :
Peel and stone mangoes and cut flesh
into thin slices, reserving any scraps. Peel and diagonally slice bananas. Peel and segment oranges, working over
a bowl to catch juices. Halve and pip both black and green
grapes. Peel and halve papaya, scoop out seeds
and cut flesh into slices, reserving any scraps. Put fruit in a serving bowl and stir
to combine. Put orange juice, lime juice, sugar
and scraps of mango and papaya in a blender or food processor fitted
with a metal blade and process until smooth. Add lime zest and pepper. Pour over fruit and chill for at least
1 hour before serving with yogurt.
Serves 4-6
Variation : Use other fruits, such as
melon, guava or pineapple, if preferred.
