Ingredients :

1 tablespoon
2 tablespoons
red peppers
green peppers
vegetable oil
orange juice
garlic, finely chopped
chopped parsley
dessert pears, peeled, core and thinly sliced
lemon juice
black olives
Grill the peppers under moderate heat turning them often, until the skins are black.
Hold each pepper on a fork or skewer under cold water.
Peel off the skins.
Cut the peppers, remove the seeds and pith and cut the flesh into strips.
Bring the oil and orange juice to the boil, pour over the peppers and leave to cool.
Stir in the garlic and parsley and season with salt and pepper.
Toss the pears in lemon juice then toss them with the pepper.
Garnish with the olives.
Serves 4
