peeled pineapple
cucumber, peeled
shallots, thinly sliced
thin fresh red chili, cored, seeded and thinly sliced
mint leaves, torn into small pieces
lime juice
light brown sugar
salt
Cut pineapple and cucumber into about 5 cm long strips.
Put into a non-reactive bowl.
Add shallots, chili, mint leaves, lime juice and sugar to the bowl.
Stir together.
Season salad with salt to taste.
Adjust levels of chili, mint, lime juice and sugar to taste if necessary.
Serves 4-6
