Ingredients :

1 tablespoon
275 ml
oranges, segmented
grapefruit, segmented
dried apricots, soaked and drained
mint leaves
plain low fat yoghurt
very thinly sliced orange peel
mint sprigs, to decorate
Mix together the fruit and mint leaves and stir in the yoghurt.
Decorate with the orange strips and mint sprigs.
Serve chilled.
