Method :
Bring a large saucepan of salted water to
the boil. Add bean sprouts all at once. Cover the pan and quickly return to
the boil. Uncover the pan and boil for 30
seconds. Tip bean sprouts into a colander
and rinse under running cold water. Press bean sprouts gently to
squeeze out surplus water. Transfer bean sprouts to a bowl. Heat a small heavy frying pan. Add sesame seeds and dry fry,
stirring, until fragrant and lightly browned. Add to bean sprouts. Add chili, garlic, sesame oil and
spring onions to bowl with bean sprouts. Toss to mix ingredients thoroughly.
Serves 4 as a side dish
