cloves garlic, chopped
shallots, thinly sliced
dried red chili, seeded and finely chopped
coconut cream
French beans, very thinly sliced |
Method :
- In a small bowl, mix together lime
juice, fish sauce, sugar, nam prik, peanuts and 2 tablespoons water;
set aside.
- In a small sauce pan, heat oil,
add garlic and shallots and cook, stirring occasionally, until
beginning to brown.
- Stir in chili and cook until
garlic and shallots are browned.
- Using a slotted spoon, transfer to
absorbent kitchen paper; set aside.
- In a small saucepan over a low
heat, warm coconut cream, stirring occasionally.
- Bring a saucepan of water to the
boil, add beans, return to the boil, add beans, return to the boil
and cook for about 30 seconds.
- Drain and refresh under cold
running water.
- Drain well.
- Transfer to a serving bowl and
toss with shallot mixture and contents of small bowl.
- Spoon over warm coconut cream.
Serves 3-4
