Method :
Shell and de-vein the prawns. Chop the garlic very finely.
Heat the oil in a frying pan and saute the prawns over a very high flame
for about 30 seconds, then reduce the heat, add the garlic and stir-fry
for a further 2-3 minutes.
Season to taste with salt and freshly ground white pepper and flame with
the sherry.
Immediately the flame dies transfer to a serving dish and sprinkle the
paprika on top.
