Method :
Peel the papaya and cut into thin shreds. Cut the peppers, carrots and
ginger into julienne strips and slice the onions.
Pound
together the black peppercorns and bayleaf. Place all the ingredients
into a mixing bowl and add the vinegar.
Allow to
marinate for 4 minutes, then transfer to a strainer and press to remove
the vinegar. Place in a salad bowl, season to taste with salt and
freshly ground black pepper and mix well.
