Italian sausage, sweet or spicy
10-ounce package frozen spinach
all-purpose flour
milk
salt
black pepper
red chili flakes (optional)

Method :
- Cook the pasta according to
directions in a large quantity of boiling, salted water.
- While the pasta boils, cook the
sausage in a skillet over medium heat.
- If it's in casings, simply squeeze
it out into the pan and discard the casing.
- Cook the sausage thoroughly,
breaking it up, until the edges start to brown, 7-8 minutes. (Note
that with most Italian sausage, the meat may still appear pink due
to the seasonings and preservatives in it.)
- Drain off and discard most of the
fat.
- While the sausage is cooking, put
the spinach in a small bowl and microwave it on high until it's
heated.
- Sprinkle the flour over the
sausage and stir well.
- Cook for a minute or two, and then
slowly stir in the milk, stirring well to prevent lumps from
forming.
- Add salt, pepper, and chili flakes
and simmer gently, stirring frequently, until the sauce is
thickened.
- Add spinach and drained pasta to
the skillet and toss well to combine.
- Heat through and serve immediately
with generous toppings of Parmesan cheese.
Serves 4
Depending on the kind of sausage you use
and whether you add chili flakes, you can make this dish spicy or mildly
sweet, as you like.
