Method :
Preheat the oven to 350F, Gas 4. For the filling, heat the oil in a
large pan and fry the minced beef for 7 minutes. Add the tomatoes purée and garlic
and cook for 5 minutes. Cook the macaroni in boiling water
for 8-10 minutes or until al dente. Drain.
Mix together the pasta and mince. Line four 150ml ramekin dishes
with the cos lettuce leaves. Season the mince and spoon into
the lettuce lined ramekins. Fold the lettuce leaves over the
mince mixture and place in a roasting tin half filled with boiling
water. Cover and cook for 20 minutes. For the sauce melt the butter in a
pan. Add the flour and cook for 1
minute. Stir in the cream and fresh basil. Season and bring to the boil,
stirring all the time. Turn out the timbales and serve
with the sauce and a crisp green salad.
An alternative way to serve pasta for a
special occasion. Mixed with minced beef and tomato and baked in a
lettuce parcel, it makes an impressive dish for a dinner party.
