Method :
Preheat the
oven to moderate 180C (350F / Gas 4). Grease a 1.5 liter ovenproof dish.
Cook the macaroni in a large pan of rapidly boiling water until tender,
then drain. Heat the butter in a large pan and add the onion and bacon.
Stir over medium heat for 4 minutes, or until soft. Add the flour and
stir over low heat for 1 minute. Remove from the heat and gradually add
the milk. Stir until smooth. Return to medium heat and cook, stirring,
for 4 minutes, or until the mixture boils and thickens. Simmer over low
heat for 1 minute. Remove from the heat and stir in the nutmeg. Add the
pasta and two thirds of the cheese. Stir until combined, then spoon into
the dish. Sprinkle with the remaining cheese and bake for 20 minutes, or
until lightly golden.
Serves 4
To flavor the milk, bring to the boil with
6 peppercorns, a slice of onion and a bay leaf. Remove from the heat,
cover and leave for 15 minutes, then strain and use as above.
