4 herrings, cleaned and boned with heads
and tails removed
salt and pepper
3 oz fine or medium oatmeal
freshly grated nutmeg
2 oz butter
chopped fresh parsley and lemon wedges, to
serve |
Method :
- Season the herrings generously
with salt and pepper.
- Mix the oatmeal with the nutmeg
and turn the herrings in the mixture, pressing well until they are
coated.
- Melt the butter in a frying pan,
add the fish and cook over moderate heat for about 5-7 minutes on
each side, until crisp and cooked through.
- Remove the fish with a fish slice,
drain and serve immediately, sprinkled with the parsley and
accompanied by the lemon wedges.
- Serve with crusty bread and a
mixed salad.
Serves 4
Herrings taste good served with an anchovy
sauce. Make up a 10 fl oz quantity of white sauce, then add 2 tsp
anchovy essence and a squeeze of lemon juice. Season with pepper.
The fish may be cooked under a medium
grill, if preferred.
