2 tbsp peanut oil
500g chicken thigh fillets
3 French shallots, sliced
2 cloves garlic, crushed
2 tsp root ginger, grated
1 tsp ground turmeric
1 tsp ground coriander
1 tsp ground cumin
1 tsp galangal powder
1 cup coconut milk
3/4 cup chicken stock
2 tsp sambal ulek
1 stalk lemongrass, bruised
2 salam leaves
1 carrot, sliced
2 potatoes, diced
150g green beans, sliced |
Method :
Heat
oil in a large saucepan. Add chicken and cook for 4-5 minutes or until
golden. Add shallots, garlic and ginger. Cook until shallots are soft. Add
turmeric, coriander, cumin and galangal powder. Cook until aromatic. Add
coconut milk, chicken stock, sambal ulek, lemongrass and salam leaves.
Bring to the boil. Add vegetables and cook for 10-15 minutes or until
vegetables are tender. Serve with nasi putih (white rice).
