750g pork spare ribs
1.5 tbsp peanut oil
1 tsp ground coriander
1/2 tsp ground cumin
1/2 tsp ground pepper
2 tbsp soy sauce
1 tbsp tamarind concentrate
1 tsp brown sugar
1/4 cup water
Paste -
2 French shallots, chopped
2 cloves garlic
2 tsp root ginger, chopped

Method :
Crush or pound
paste ingredients in a mortar with pestle or in a small food processor.
Chop spare ribs in half. Heat 1 tbsp oil in a wok or frying pan. Add spare
ribs and stir-fry for 2-3 minutes or until ribs are golden and crisp.
Remove and set aside. Heat remaining oil and add paste. Stir-fry for 1
minute. Add coriander, cumin, pepper, soy sauce, tamarind and sugar.
Return ribs to sauce and simmer covered for 10 minutes or until ribs are
cooked through. Add a little water if sauce becomes too thick. Serve with
Chinese greens and side bowl of rice.
