Almost everybody, when asked what food
they would associate with the Indian sub-continent would be bound to
reply, "curry", little realizing that not every spiced dish is a curry
and curry is not just one dish. It includes a whole range of dishes,
each distinctly different according to the spices and herbs used in
varying combinations. Spices, imaginatively used, are the most important
features of Indian cooking: hot or mild, pungent or bland, there is
something to suit every palate. Raita is a traditional Indian
accompaniment for most hot curries. It is also delicious when served
with a pile of spicy poppadums as a dip.
