Method :
Heat
the oil in a medium saucepan. Add the garlic, onion and bacon, and cook
gently for 5 minutes, stirring occasionally. Stir in the tomatoes,
seasoning, sugar, fruit vinegar and basil. Cover the saucepan and simmer
the ingredients gently for 30 minutes, or until the tomatoes are pulpy.
Puree
the sauce in a blender or food processor, then sieve it to remove all the
tomato pips and pieces of skin. Reheat the sauce, taste and adjust the
seasoning before serving either hot or cold.
Serves 4-6
It is important for this sauce to choose
tomatoes which have a really good flavor or the end result will be
insipid.
