Method :
Cook
the seasoned skate wings, two at a time in a large frying pan, with the
wine, shallots and herbs. Baste them with the wine during cooking. Cook
for about 10 minutes, or until tender. Remove the skate to a serving dish
and keep hot. Pour off the cooking liquor and retain as fish stock for
another recipe.
Wipe
out the pan. Add the butter, heat until lightly browned, then add the
vinegar. Pour immediately over the skate wings.
Serves 4
The ribbed flesh of skate has a pleasant
flavor in this simple classic dish that is quick to prepare.
