Method :
Place the spinach in a large saucepan. Add 45ml (3 tbsp) water and a
little salt. Bring to the boil, then cook the spinach for 10 minutes or
until it is tender. Drain the spinach thoroughly, squeezing out the water,
and chop it finely.
Heat
30ml (2 tbsp) of the oil in a medium saucepan. Add the onion and garlic,
and cook gently for about 5 minutes. Stir in the spinach and seasoning
until well mixed. Turn the mixture into a medium gratin dish.
Season the sardines and lay them on top of the spinach. Sprinkle the
breadcrumbs over the top, then trickle the remaining oil over the crumbs.
Bake at 190C (375F) mark 5 for 15-20 minutes.
Serves 3-4
An inexpensive supper dish which will
prove extremely popular.
