Tuna Livorno Style Recipes

Ingredients : |
6 oz tuna steaks
2 oz plain flour
4 tbsp olive oil
1 small onion, finely chopped
4 parsley sprigs, finely chopped
4 fl oz dry white wine
1 tbsp capers, drained
1 bay leaf, crumbled
1/4 tsp ground cinnamon
salt and pepper
new potatoes and green salad, to serve |
Method :

Coat the tuna steaks in flour.

Heat the oil in a heavy based pan, mix
the onion and parsley together and add them to the pan.

Sauté over a medium heat, stirring,
until just golden, but not brown.

Add the tuna steaks and cook for 2
minutes on each side.

Season to taste with salt and pepper
and pour over the wine.

Leave until this has evaporated a
little, then add the capers, crumbled bay leaf and cinnamon.

Cover and cook for 15 minutes, adding
water if needed.

Serve the tuna steaks with the cooking
juices poured over, accompanied by new potatoes and a green salad.
