1/4 cup lemon juice
1/4 cup honey
1/2 tsp sea salt
2 medium cucumbers, peeled and cut into
1/4" slices
1 small head of chicory
1 small bunch of arugula, with stems
removed
1 small head radicchio
1 pound smoked salmon, thinly sliced
2 tsp finely chopped fresh parsley

Method :
In a medium
mixing bowl, combine lemon juice, honey, and salt. Stir in cucumber
slices to coat well, and let marinate for 1 hour in refrigerator. While
cucumbers are marinating, immerse chicory, arugula, and radicchio
completely in ice cold water to remove all sand and dirt. Drain, rinse
again, and pat dry. Tear into bite size pieces and arrange on decorative
serving platter. Arrange fish on bed of mixed lettuce. Place marinated
cucumbers on top of fish and drizzle with remaining marinade. Sprinkle
with parsley for garnish and chill before serving.
Fresh green
cucumbers, lightly marinated in a sweet and tangy glaze, are a marvelous
complement to smoky salmon. Served on a bed of bitter chicory, pungent
arugula, and bright red radicchio, it's a colorful salad for any
occasion.
