freshly squeezed lemon juice
white wine vinegar
white wine
cloves garlic, crushed
large carrots, cut into strips
asparagus, cut into 3cm lengths
red capsicum, seeded and chopped
chopped parsley |
Method :

Cut fish into thin strips and
marinate in combined lemon juice, vinegar, wine and garlic for 2
hours.

Meanwhile, bring a large saucepan
of water to the boil, add carrots, cook for 1 minute.

Add asparagus and cook for 1
minute.

Drain and refresh carrots and
asparagus under cold water, drain.

Remove fish from marinade, toss
with the blanched carrots and asparagus, capsicum and parsley, and
serve immediately.
