Mackerel and Grapefruit Sticks Recipe

smoked mackerel fillets
grapefruit, segmented
orange, segmented
chopped mint
vegetable oil
orange juice
pepper |
Method :

Cut each mackerel fillet into 4.

Thread on to 4 skewers with the
grapefruit and orange segments.

Mix together the mint, oil, orange
juice and pepper.

Pour over the skewers, cover and leave
in the refrigerator for at least 1 hour - or overnight if that's
easier.

Grill the skewers under medium heat
for 4-5 minutes, turning frequently.

Serve with hot whole meal rolls.
