2 halibut steaks, about 12oz (350g) each
1/2 tsp salt
1/8 tsp pepper
1 tsp lemon juice
3 tbsp olive oil
2 large tomatoes, peeled and chopped
1 medium onion, chopped
1 clove garlic, crushed
1/2 tsp salt
1 tsp sugar
1/4 cup chopped parsley
3 tbsp tomato paste
1/4 cup sherry
1/2 cup water
1/4 tsp dried mint
4 sliced lemon
1 tbsp butter
hot cooked rice |
Method :
Heat oven to
375F (190C). Grease a shallow baking dish just la4rge enough to hold the
halibut steaks in a single layer. Put the steaks in the dish and
sprinkle with 1/2 tsp salt, pepper and lemon juice. Heat olive oil in
medium saucepan. Add tomatoes, onion and garlic and cook gently,
stirring, until soft, about 5 minutes. Add 1/2 tsp salt, sugar, parsley,
tomato paste, sherry, water and mint and simmer uncovered, 10 minutes.
Pour tomato mixture over fish. Lay lemon slices on fish. Dot with
butter. Cover baking dish tightly with aluminum foil. Bake about 30
minutes or until fish flakes easily with a fork. Serve with rice.
