medium zucchini or carrot (optional)

herbs, fresh or dried (try oregano, dill,
rosemary, parsley, thyme)

Method :

Preheat the oven to 350oF
(190oC).

Lay four 12-inch squares of aluminum
foil or parchment paper on a baking sheet.

Place a fillet of fish on each square,
dot with butter or drizzle with olive oil, and add a few sprigs or
sprinkles of herbs, as desired.

Slice the lemon thinly and distribute
the rings among the packets.

Season well with salt and pepper.
-
If using zucchini or other vegetables,
grate them in a food processor and distribute them among the
packets.

Fold the packages in half and twist
the edges together to seal.

Bake for 20-25 minutes until the
packages are puffed up with steam.

Serve individual packets on each plate
and tear them open with forks.
Serves 4
"En papillote" is the French term for food
cooked in little parchment paper or foil packages. Although parchment
paper makes a lovely looking package, aluminum foil makes a tighter and
more reliable seal for busy cooks.
